Tea enjoys an outstanding position in East Frisia where normally about ten times more tea is consumed per capita than the rest of Germany.

In East Frisia tea is drunk up to six times a day, and the special preparation of Ostfriesentees also follows its own ritual: First, a big piece of sugar candy is placed in the cup, then the tea is slowly poured over, to the distinct crackle sound of the sugar candy. Next some cream is added to the tea, which after poured rises to the surface in clouds. Three layers form in the cup, which are to be left unstirred. With the first sip you can taste the sweetness of the cream, followed by the bitter tea which then itself, dominates the sweetness of the sugar candy. Delicious and aromatic!

Tee genießt in Ostfriesland eine herausragende Stellung: Dort wird im Schnitt pro Kopf etwa zehnmal mehr Tee getrunken als im übrigen Deutschland.

In Ostfriesland wird bis zu sechsmal am Tag Tee getrunken. Die spezielle Zubereitung des Ostfriesentees folgt auch einem eigenen Ritual: Zuerst wird ein großes Stück Kandiszucker in die Tasse gegeben, darüber dann der Tee. Dabei lauscht man dem deutlich zu hörenden Knistern. Danach wird etwas Sahne in den Tee gegeben, die zuerst absinkt und dann in Wölkchen wieder an die Oberfläche steigt. Damit haben sich drei Schichten in der Tasse gebildet, die auch nicht umgerührt werden: Mit dem ersten Schluck schmeckt man die Milde der Sahne, mit dem nächsten den herben Tee selbst. Im letzten Schluck dominiert dann die Süße des Zuckers. Lecker!
